Most of the pans are shallow and have sloping sides, which helps the rice cook evenly and develops more intense flavor. Our authentic paella pans do not come with matching lids, since paella is traditionally cooked in an open paella pan, but a cover can always be useful to cover the pan when done cooking. If you would like the option of covering the pan, we do carry universal lids in various sizes.
