Handy recalibration tool on the thermometer’s sheath facilitates high level of accuracy required in the best coffee shops, restaurants and commercial kitchens. Just immerse the thermometer in sheath in at least two inches of ice water, then use the calibration tool to adjust the hex nut beneath the dial to 34ºF. Recalibration can also be reached through immersion in boiling water and adjusting to the appropriate temperature.
