USING THE MANDOLINE SLICER

The pusher / guard: The pusher is designed not to come in contact with blades as you grasp the knob to slide the food up and down the mandoline. Spikes underneath secure food on the pusher as you slice.

Cut the food to suit the width of the pusher. Trim tips and stems for similar size slices. Press the food onto the pusher's spikes. Grab the knob on the pusher and slide down the mandoline, over the slicing blades. Maintain constant pressure ensuring the spikes keep a grip on the food.

Adjusting slice thickness: The knob on the mandoline adjusts slice thickness by rotating it clockwise or counter-clockwise. This raises or lowers the upper guiding plate which creates thicker or thinner slices. The indicator on the side of the mandoline shows slice thickness increments of 1/32" (1 mm).

Choosing a blade: Slicing Blade, This is the mandoline's main blade with a straight edge for basic slicing and a serrated edge for crinkle and waffle cuts. The blade is very sharp! Handle with care holding it by its knurled knob, or by its sides.

The straight edge is ideal for slicing a variety of foods from carrots and cabbage to lemons and potatoes. For straight cuts, place the food either endwise or lengthwise onto the pusher.

The serrated edge easily makes crinkle and waffle cuts. A crinkle cut requires only one slide over the blade. For a waffle cut, adjust the guiding plate so the slices are slightly thicker than the serrated edge of the slicing blade.
Once the thickness is adjusted, slide food over the blade. Then rotate the food 90° and slide a second time creating an opposite crinkle cut on each side.

IMPORTANT: When making waffle cuts, pusher cannot be used, so it is strongly recommend that you work with longer sections of fruit / vegetables to keep your hands clear of the slicing blade. As the fruit / vegetables shrink, set them aside for other uses. Do not try to slice too quickly... always use extreme caution!

Only use julienne blades with the straight edge of the slicing blade. Do not use them with the serrated blade.

Cleaning and Maintenance - Remove any inserted cutting blade units. Clean mandoline and fluted blade carefully under warm running water using a soft bristled scrub brush. Clean the straight blade and cutting blade units the same way. The frame is dishwasher safe, as is the attached fluted blade (but be sure to remove the straight blade first, as it is not recommended as dishwasher safe). Finally, place everything back in it's box for safe storage.
