Truffles are
found anywhere from 2 to 16 inches below the ground. Because of their high price
and their pungent taste, truffles are used sparingly. White truffles are
generally served uncooked and shaved over steaming buttered pasta or salads.
White or black paper-thin truffle slices may be inserted in
meats, under the skins of
roasted
fowl, in
foie gras preparations,
in
pâtés, or in
stuffing. The flavor of
black truffles is far less pungent and more refined than their white cousins. It
is reminiscent of fresh earth, mushrooms, and when fresh, their scent fills a
room almost instantly.
Truffles have
been found in Europe, Asia, North Africa, and North America. They live in close
mycorrhizal association with the roots of specific trees. Their fruiting bodies
grow underground.
The
Swiss Cheese Scraper or Girolle
has been used for many years in the restaurant trade, particularly for
accenting cheese platters and cheese appetizers. Can also be used to
shave chocolate.Designed for use with a special
cheese from Switzerland known as "Tete de Moine" or Monk's Head, which has
the perfect consistency to create unique cheese rosettes. Can be used with
most firm, round cheeses.
The Swiss cheese shaver ( girolle ) is a round platform,
with a steel rod sticking up from the center. the top rind of the cheese
is sliced off. Then the wheel is pushed down over the rod, which sticks up
an inch or two. A small scraping knife is placed atop the rod and is
turned like a crank, dragging it across the top of the cheese. The rod
shaves up thin little curlicues of the cheese.
The Original Girolle comes
with a metal shaping knife and a base plate of solid hard plastic. The central
shaft and the shaping knife are made of stainless steel in an alloy
specially adapted to kitchen usage. The Swiss cheese shaver ( girolle
