To use the ravioli mould with pins: - cut a sheet of pasta dough into two rectangles,
each slightly larger than the ravioli plates.
- Sprinkle the top of the
metal plate and the bottom of the plastic plate with flour, and tap off
the excess.
- Place one rectangle of dough over the zigzag plate and gently
form pockets.
- Remove the top plate, fill the pockets with your favorite ravioli
stuffing, and then, using a small pastry brush dipped in water, moisten
the dough along the zigzag lines before topping it with the other
rectangle of dough.
- Run a rolling pin back and forth over the dough until
all the ravioli are cut and tightly sealed.
- Turn the plate upside down and
tap it on the counter to release the pasta.
