The
Swiss Cheese Scraper or Girolle
has been used for many years in the restaurant trade, particularly for
accenting cheese platters and cheese appetizers. Can also be used to
shave chocolate.Designed for use with a special
cheese from Switzerland known as "Tete de Moine" or Monk's Head, which has
the perfect consistency to create unique cheese rosettes. Can be used with
most firm, round cheeses.
The Swiss cheese shaver ( girolle ) is a round platform,
with a steel rod sticking up from the center. the top rind of the cheese
is sliced off. Then the wheel is pushed down over the rod, which sticks up
an inch or two. A small scraping knife is placed atop the rod and is
turned like a crank, dragging it across the top of the cheese. The rod
shaves up thin little curlicues of the cheese.
