Inclined cooking surface -  The inclination is just enough for the food not to move, but for the fats which are secreted to move through the simple law of gravity towards the front base, where they stay at temperature more befitting their characteristics. The most important thing is that this inclined surface allows us to ensure that saturation of fats during cooking is minimal.

 

Raised profile - Candela’s raised profile at the back helps keep the work surface clean from oil splashes. It also enables us to move food within the grill with the guarantee that we will not spill it, making it very useful for sautéing in the same way as with a wok.

 

Front cooking pan - The front part of Candela is designed for containing the liquids produced during cooking. The temperature at this point is lower than in the cooking centre and the fats are not exposed to so much saturation. You can also cook in this part of Candela.

Aluminum body -  This material transmits the temperature in an excellent way and is lighter than iron or steel. Moreover, the injection process that Valira subjects it to improves it, making it stronger and undeformable. This enables us to ensure a solid skeleton and uniform temperature. In the case of the version for electromagnetic induction, Candela has a diffuser disc in ferritic material that accurately transmits the power and precision of the cooking in a very short time: 120 oC in one minute.

 

Removable grille - The removable grille enables us to keep food warm once they have been cooked, before serving. It can be washed in the dishwasher.

 

SPOUT -  Liquids accumulated at the front of the pan can be easily eliminated thanks to the spout, which pours them out without losing a drop on the way. It is a convenient way of saving the excess fats, which may be useful for preparing sauces or dressings.

Steaming hood - This accessory is for covering the ingredients we are cooking. At a lower temperature than the one we use to grill, the steam that comes from the food is retained, undertaking a double cooking by steaming.
